I'd have to say a dude from Star Ocean three named Norton.
I mean...
You can take him on at level 3 or 4 and easily beat him
XD

I forgot the boss' name but the 3rd one you face in Breath of Fire IV as Fou-lu. You don't even need to transform into dragon form. Pika

Also, in Baten Kaitos Origins, the second time you face Giacomo. Piece of cake. xD *spams relay combos*

Parasite Queen Metroid prime. My first playthrough (also my first console FPS) I won taking 0 damage. I think the normal parasites when escaping are worse LOL.

Oh yeah, I forgot about Raditz on Budokai Tenkaichi. XD He was so easy that it wasn't even funny. And Guldo, he was pretty easy. As well as Buu when you fight him with Gohan. For too many easy bosses. >>
